Pineapple Romanoff

Ingredients:
  • 1 large pineapple
  • 4 tbsp. cream
  • 2 tbsp. icing sugar
  • 1 tot dark rum*
  • A tot is approximately 25 ml (0.8 US fluid ounces), traditionally given to sailors on Royal Navy ships between 1850-1970.

Instructions:

Pineapple Chunks
  1. Cut the pineapple in half lengthwise. Carefully scoop out the inside, leaving two hollow pineapple halves to use as bowls.
  2. Cut the pineapple flesh into cubes—one-inch cubes work well—and place them back into the pineapple bowls. Set aside.
Boozy Cream 3. In a separate bowl, mix 4 tablespoons of cream with icing sugar and dark rum (if making at home). Stir well. 4. Pour the pineapple cubes into the cream mixture and toss gently until evenly coated. 5. Return the coated pineapple cubes to the pineapple halves.
